Michroma raises 6.4M in seed round

Michroma has raised $6.4M in a seed round with plans to bring their sustainable fungal-derived food coloring and flavors to the market over the next two years after receiving FDA approval. Michroma has developed a novel red colorant, Red+, which is advantageous for intensive processes like cooking and pasteurization due to its temperature and pH resistance. Additionally, unlike synthetic food dyes, Red+ is produced without petroleum.
Michroma leverages precision fermentation, an increasingly popular technology to recreate proteins at scale, in order to extract high-performance colorants from mushrooms.
